As 2019 approaches, it’s time to take a look at my wedding cake design highlights of the year. From soft, muted dessert tables filled with sweet treats and cake delights, to decadent, intricate 5-tier masterpieces, the year has been varied and creative. I design wedding cakes that are individual to each couple, taking aspects from their wedding day and incorporating into edible sugar art. Here are just a few of these bespoke creations…
This pastel beauty looked so lovely in my Hampshire cake studio I didn’t want it to leave! Ironically for a wedding in The Italian Villa, this four-tier country garden style cake combines powder blue and pink shimmer fondant icing, silk bow and a sparkling brooch. Finished with sugar flowers of traditional roses, a ruffled peony, hydrangeas, buds and foliage, this was one of my most talked-about cakes of the year.
My couple fell in love with one of my showpiece wedding cake designs, so I adapted the design into something bespoke to their day, using their wedding flowers of sweet avalanche roses, O’Hara roses, freesia, lisianthus, David Austin roses and silvery foliage. Using their chosen colour scheme, I added watercolour to all the tiers and hand painted the silver monogram which was on all the stationery. I had the pleasure of setting this up at Hampshire wedding venue Highfield Park along with two mini-cakes alongside it.
This autumn I created a stunning six-tier cake for a wedding at the Corinthia Hotel London. The brief was for a blank canvas; a blush wedding cake which would then be decorated with fresh flowers. Once it was in place, the florist created this masterpiece of cascading blooms spiralling around the tiers. What a beautiful sight!
This 5-tier wedding cake was one of my most intricate designs of the year. I worked closely with the lovely bride to design this cake of her dreams. It used a colour palette of white and gold, and it combined highly detailed sugar art to create a decadent, opulent wedding cake that fit the grandeur of the Hampshire wedding venue, Somerley House.

I just loved the rich burgundy of this wedding cake; the warmth and depth of the colour really brought this October wedding cake to life. I created sugar flowers of dahlia, roses, spray roses, lisianthus, astrantia, astilbe and foliage and positioned them into a natural-looking arrangement that matched the wedding flowers. It looked great in my studio, just as it did at their wedding venue of Burley Manor in Hampshire.
In November my couple married at Hampshire wedding venue Froyle Park, and I created a decadent dessert table combining three different wedding cakes, white chocolate pyramids, cookie pops, meringue kisses and iced biscuits inscribed with their wedding date. The wedding cakes all fit together using different techniques including metallic taupe paint, foil, white sequins, shimmer, marble effect and sugar flowers of roses and dusty miller foliage – perfect for a winter wedding!
